Old Fashioned Cornbread
(this is not
a sweet cornbread)
1 c. yellow cornmeal
1 c. buttermilk
1 egg
1 Tbs. oil
1/2 tsp. salt
1/2 tsp. baking soda

Wipe an iron skillet with oil. Blend all ingredients together.
In the center of the skillet pour 1 Tbs. oil. Pour mixture into the oil
and bake in a 350º F oven for 25 minutes.
(We always doubled this recipe.)
You can add other ingredients such as a can
of corn, chopped green chilies, chopped onions, or anything that might strike
your fancy.
My Grandmother served this cornbread with
a pot of pinto beans and a ham hock that simmered on the stove for about
6 hours.
My mother served her cornbread and beans
with slawed cabbage using only oil, vinegar, salt and pepper.
Throw in a couple of wieners and you have
a great meal.
